Grilled Tequila Lime Chicken Taco Salad

The Concept

A fiesta in a bowl. Chicken marinated in tequila and lime with cumin and chili gets grilled and sliced over a loaded taco-style salad in a crispy tortilla bowl (optional but spectacular). Bold, loud, fun.


Ingredients

For the Tequila Lime Chicken:

  • 2 large chicken breasts
  • 3 tbsp tequila (blanco)
  • Juice and zest of 2 limes
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp cayenne
  • 1 tsp honey
  • Salt and pepper

For the Taco Salad:

  • 4 cups shredded romaine
  • 1 cup black beans, drained
  • 1 cup charred corn (grill or pan-char)
  • 1 cup pico de gallo (fresh tomato, onion, jalapeño, cilantro, lime)
  • 2 avocados, sliced or made into guacamole
  • ½ cup sour cream
  • 1 cup shredded Monterey Jack or pepper jack
  • Fresh cilantro
  • Pickled jalapeños
  • Tortilla strips or a crispy tortilla bowl
  • Lime wedges

For the Taco Dressing:

  • 3 tbsp sour cream
  • 2 tbsp mayonnaise
  • 2 tbsp lime juice
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • 1 tbsp hot sauce (Cholula or Valentina)
  • Salt and pepper

Method

Step 1 — Marinate and Grill Chicken: Whisk tequila, lime juice and zest, olive oil, garlic, cumin, chili powder, paprika, cayenne, and honey together. Coat chicken thoroughly. Marinate minimum 1 hour — the tequila tenderizes the meat. Grill over high heat 6–7 minutes per side until charred and cooked through. Rest and slice.

Step 2 — Make the Dressing: Whisk all dressing ingredients until smooth. Season to taste. Add more hot sauce if you want more heat.

Step 3 — Char the Corn: Place corn kernels in a dry cast-iron skillet over high heat. Do not stir for 2 minutes — let them blister and char. Toss and char on the other side. Season with a pinch of cumin and salt.

Step 4 — Assemble: Line a large bowl or platter (or tortilla bowl if using) with romaine. Arrange black beans, charred corn, pico de gallo, and avocado in separate sections around the base — keep the components distinct for visual impact. Lay the sliced chicken across the center. Drizzle dressing over the entire salad. Add sour cream, cheese, cilantro, pickled jalapeños, and tortilla strips. Serve with lime wedges.

Chef's Note: The tequila cooks off completely during grilling, but it tenderizes the chicken and leaves a faint citrus-floral depth in the char. Don't substitute it out.
