The Concept
Slow-cooked, crisped pulled pork — the real deal — served over a boldly seasoned Southwestern salad with chipotle-lime dressing that has genuine smoke and heat. This is the most indulgent salad on the list and earns every calorie.
Ingredients
For the Carnitas (slow cooker method):
- 1 kg (2 lbs) pork shoulder, cut into large chunks
- 1 tbsp chipotle powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- Salt and black pepper
- Juice of 2 limes
- Juice of 1 orange
- 4 garlic cloves, smashed
- ½ cup chicken stock
For the Salad:
- 4 cups shredded romaine
- 1 cup black beans, drained and rinsed
- 1 cup corn (roasted or charred)
- 1 cup cherry tomatoes, halved
- 2 avocados, sliced or cubed
- ½ red onion, diced
- ½ cup shredded sharp cheddar or pepper jack
- Fresh cilantro
- Lime wedges
- Tortilla strips or crushed tortilla chips
For the Chipotle Lime Dressing:
- 3 tbsp chipotle peppers in adobo sauce (blend with sauce)
- ¼ cup sour cream or Greek yogurt
- 3 tbsp lime juice
- 1 tbsp honey
- 1 garlic clove
- 2 tbsp olive oil
- Salt and pepper
- Water to thin
Method
Step 1 — Cook the Carnitas: Rub pork with all the spices, salt, and pepper. Place in a slow cooker with garlic, lime juice, orange juice, and stock. Cook on low 8 hours or high 4–5 hours until completely fall-apart tender. Shred with two forks. Spread shredded pork on a foil-lined baking sheet and broil 5–7 minutes until the edges crisp and caramelize into little crunchy shards. This step is essential.
Step 2 — Chipotle Lime Dressing: Blend chipotle peppers, sour cream, lime juice, honey, garlic, and olive oil until completely smooth. Season with salt and thin with water until pourable. It should be smoky, tangy, and have real heat.
Step 3 — Assemble: Arrange romaine on a wide platter. Layer black beans, corn, tomatoes, and red onion across the base. Pile the crispy carnitas in the center while hot. Add avocado slices around the edges. Drizzle dressing generously. Scatter cheddar, cilantro, and tortilla strips over the top. Serve with lime wedges.
