Grilled Lemon Herb Mediterranean Chicken Salad

 

The Concept

A bright, sun-drenched salad built on the flavors of the Mediterranean coast — charred lemony chicken, crisp vegetables, briny olives, and creamy feta, all tied together with a herbaceous olive oil dressing.


Ingredients

For the Chicken Marinade:

  • 2 large boneless, skinless chicken breasts
  • 3 tbsp extra virgin olive oil
  • Zest and juice of 1 large lemon
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp dried rosemary, crushed
  • ½ tsp smoked paprika
  • Salt and black pepper to taste

For the Salad Base:

  • 4 cups romaine lettuce, chopped
  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, sliced into half-moons
  • ½ red onion, thinly sliced
  • ½ cup Kalamata olives, pitted
  • ½ cup roasted red peppers, sliced
  • ¾ cup crumbled feta cheese
  • ¼ cup fresh parsley, roughly chopped
  • ¼ cup fresh mint leaves

For the Lemon Herb Dressing:

  • 4 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp red wine vinegar
  • 1 small garlic clove, grated
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • ½ tsp dried oregano
  • Salt and cracked black pepper to taste

Method

Step 1 — Marinate the Chicken: Whisk together the olive oil, lemon zest, lemon juice, garlic, oregano, thyme, rosemary, paprika, salt, and pepper in a bowl. Score the chicken breasts lightly with a knife to help the marinade penetrate. Coat thoroughly, cover, and refrigerate for at least 30 minutes — 2 hours is ideal.

Step 2 — Grill the Chicken: Preheat your grill or grill pan to medium-high heat. Lightly oil the grates. Grill the chicken for 6–7 minutes per side until you have strong char marks and the internal temperature reads 165°F (74°C). Remove and rest for 5 minutes before slicing diagonally into strips.

Step 3 — Make the Dressing: Whisk together olive oil, lemon juice, red wine vinegar, garlic, Dijon, honey, and oregano until fully emulsified. Season with salt and pepper. Taste and adjust acidity or sweetness.

Step 4 — Assemble: Layer romaine and baby spinach in a wide salad bowl. Arrange tomatoes, cucumber, red onion, olives, and roasted peppers across the top. Fan the sliced chicken over the center. Shower with crumbled feta, parsley, and mint. Drizzle the dressing generously right before serving.

Chef's Note: Soak the red onion slices in cold water for 10 minutes before using — it removes harshness while keeping the crunch.
