Balsamic Chickpea Avocado Feta Salad

 

The Concept

A fully plant-forward powerhouse. Roasted chickpeas bring crunch and protein, avocado brings creaminess, balsamic brings depth, and feta brings the salt and tang. This is the salad that converts skeptics.


Ingredients

For the Roasted Chickpeas:

  • 1 can (15 oz) chickpeas, drained, rinsed, and thoroughly dried
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ¼ tsp cayenne
  • Salt and pepper

For the Salad:

  • 4 cups mixed greens (spinach, arugula, romaine)
  • 2 ripe avocados, cubed
  • 1 cup cherry tomatoes, halved
  • ½ English cucumber, diced
  • ¼ red onion, thinly sliced
  • ½ cup crumbled feta
  • ¼ cup sun-dried tomatoes (oil-packed, sliced)
  • Fresh basil leaves

For the Balsamic Dressing:

  • 3 tbsp balsamic vinegar
  • 1 tbsp balsamic glaze
  • 4 tbsp extra virgin olive oil
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 1 small garlic clove, grated
  • Salt and pepper

Method

Step 1 — Roast the Chickpeas: Preheat oven to 400°F (200°C). The chickpeas must be completely dry before roasting — spread on a towel and pat aggressively. Toss with olive oil and all the spices. Spread in a single layer on a baking sheet. Roast 30–35 minutes, shaking the pan halfway, until deep golden and genuinely crunchy all the way through. Cool on the pan — they crisp more as they cool.

Step 2 — Make the Dressing: Whisk balsamic vinegar, balsamic glaze, olive oil, honey, Dijon, and garlic together until fully combined. Season with salt and pepper. The glaze gives the dressing an extra sticky richness.

Step 3 — Assemble: Toss greens with half the dressing and arrange in a wide bowl. Scatter avocado cubes, cherry tomatoes, cucumber, red onion, and sun-dried tomatoes over the greens. Pile the roasted chickpeas on top while still slightly warm. Crumble feta generously over everything. Drizzle remaining dressing. Finish with fresh basil.

Chef's Note: Add the chickpeas right before serving. If they sit in dressing, they lose their crunch — and that crunch is the whole point.
