Easter Dirt Cake Casserole
Every Easter table needs one dessert that looks impressive, requires zero effort, and disappears before the main course is even cleared. This is that dessert.
Crushed Oreos on the bottom, a rich chocolate pudding and cream cheese filling in the middle, a fluffy Cool Whip top, and a garden of candy eggs and Peeps sitting in green coconut grass — it looks like spring, tastes like a dream, and the best part is you make it the night before and forget about it until showtime.
No oven. No stress. Just layers.
Ingredients
The Crust
- 46 Oreo cookies (whole, cream filling included)
- 6 tablespoons unsalted butter, melted
The Filling
- 8 oz cream cheese, softened to room temperature
- 4 tablespoons unsalted butter, softened
- 1 cup powdered sugar
- 2 boxes (3.9 oz each) instant chocolate pudding mix
- 3 cups cold whole milk
- 16 oz Cool Whip, thawed and divided in half
The Decorations
- 1 cup shredded coconut, dyed green
- 1 cup Cadbury mini eggs or pastel M&Ms
- 6 Peeps marshmallow chicks
Instructions
Step 1 — Crush the Oreos Pulse all 46 Oreos in a food processor until you get fine, even crumbs. No processor? Seal them in a zip-lock bag and crush with a rolling pin. Set aside ¾ cup of crumbs for the topping — you'll need them later.
Step 2 — Make the crust Mix the remaining crumbs with the melted butter until every crumb is coated. Press firmly into the bottom of a 9×13-inch dish using the flat bottom of a measuring cup. Freeze for 5 minutes to firm it up while you work on the filling.
Step 3 — Make the cream cheese layer Beat the softened cream cheese and softened butter together with a hand mixer until completely smooth. Add the powdered sugar and beat until fluffy. Set aside.
Step 4 — Make the pudding In a separate bowl, whisk both boxes of pudding mix into the cold milk for about 2 minutes until it thickens. Let it sit for 5 minutes to set properly.
Step 5 — Combine the filling Fold the pudding into the cream cheese mixture on low speed until just combined. Then gently fold in 8 oz (half) of the Cool Whip with a spatula — fold, don't stir, to keep it light and airy.
Step 6 — Layer it up Spread the filling evenly over the chilled crust. Spread the remaining 8 oz of Cool Whip across the top as a clean final layer. Sprinkle the reserved ¾ cup of Oreo crumbs over everything so it looks like rich dark soil.
Step 7 — Chill Cover tightly with plastic wrap and refrigerate for at least 3 hours. Overnight is strongly preferred — the layers set better and the whole thing becomes richer and more sliceable.
Step 8 — Decorate and serve Right before serving, scatter the green coconut grass over the top, nestle in the candy eggs, and stand the Peeps upright. Serve cold, straight from the dish.
Tips
Make it the night before. This dessert is genuinely better after a full night in the fridge. The crust firms up, the layers meld, and slicing becomes clean and easy.
Add decorations last minute only. Peeps go soggy fast. Colored candy eggs can bleed into the cream. Decorate right before it hits the table.
Green coconut grass. Put shredded coconut in a zip-lock bag, add 3 drops of green gel food coloring, seal, and shake for 30 seconds. Done.
Pudding swap. Vanilla, white chocolate, or cheesecake pudding all work if chocolate isn't your crowd's thing — and gives the dish a lighter, more pastel look.
Individual jars. Layer into small mason jars for party portions. Guests love their own little dirt cup.
Storage. Keeps covered in the fridge for up to 3 days. Remove Peeps before storing. Don't freeze — the texture suffers badly on thawing.
